Breakfast 2

This is another breakfast.  One not so small potato cubed seasoned and grilled on a cast iron skillet with olive oil sitting on top of a half of an avocado that is also seasoned.  The vegetables are leeks, onions, Bok Choy and baby Bok Choy.  The protein is a few ounces of chicken or Turkey and one egg.  For a change of pace from lime juice you can use lemon juice or a splash of red wine vinegar, salsa, soy sauce, or any combination of them.  The advantage of putting the egg on top of vegetables in the frying pan is that it never touches the pan so it doesn’t stick
